Lambert Shellfish is a new shellfish operation located at the mouth of Hungars Creek, in Machipongo, VA. In 2019, Alex Lambert, cofounder/farmer, left the accounting firm PricewaterhouseCoopers to pursue his dream of starting his own shellfish operation.

Lambert Shellfish differentiates its oysters (petite Loving Cups and larger Rocky Tops) by growing them in adjustable longline baskets (a method developed in Australia about 20 years ago, but is still uncommon here in the Chesapeake Bay region). The oysters are grown in baskets, which clip onto longline cables, so they tumble with the ebb and flood of the tides, and are left exposed out of the water for about half a day when the tide is out - resulting in a stronger/prettier shell, and a better meat-to-shell ratio.

Lambert Shellfish is also committed to being the most environmentally- and community-friendly operation possible. We offer a fully-biodegradable cold chain packaging option for direct-to-consumer deliveries, and a fully-recyclable box for our wholesale deliveries. Alex also recently received an ecotourism license, and is excited to begin offering public farm tours and interactive experiences to guests.
